Whole 30, Day 2:
Woke up still feeling sleepy after 8 hours. Went for walk to get the blood moving. Joints of fingers and wrists a little achey today….maybe related to too much cold press coffee yesterday? Had a teaspoon of coconut oil and then sipped the blueberry ginger smoothie which is a favorite of mine. It includes ginger and cinnamon, both of which are said to have anti-inflammatory properties. Low inflammation, here I come!
Blueberry Ginger Smoothie (with sneaky Kale)
-2 c flax milk (or coconut milk or water)
-handful of kale (maybe 1-2 c)
-1 T fresh ginger, chopped
-1 T cinnamon, or more to taste
-1 c frozen blueberries
-1/2 c frozen pineapple (increase amount for a sweeter smoothie)
Blend together, tweaking amounts to make your tastebuds glad they’re awake and in the process of being re-trained. Makes about 3-4 cups worth depending on amount of liquid added.
